Within the Cnam, the BIAA (Industrial and Food Biochemistry) laboratory is part of the STI (Industrial Sciences and Technologies) department. Mr. Jacques Nicolas is the professor holding the Chair. He was also elected president and named administrator of the department last December.

The Chair's team is composed of 18 permanent members and welcomes many trainees of various study levels. With a layout of diverse equipments, the laboratory provides both educational and research facilities.
